Romain has been a wine buyer, sommelier and wine entertainer in London and America for the last 15 years.
Romain has successively been promoted as Head Sommelier for celebrity chefs such as Martin Blunos (Lygon Arms), the Roux Brothers (Sofitel London) and Marcus Wareing (The Savoy). From 2013 he became the wine director for Chiltern Firehouse in Marylebone where he put together an exclusive and eclectic wine list for the most discerning and valued guests. Meanwhile Romain was also looking after the wine programmes for Chiltern Firehouse’s sister hotels and restaurants in America such as Chateau Marmont in Los Angeles or Sunset Beach in The Hamptons.
During these years Romain only had one rule: To make guests feel at home while taking them on a fun discovery wine journey. In order to do so and create memorable experiences, Romain loves to revisit the classics, show some iconic wine labels, understand the new trends, explore unknown wine regions and search for the next big thing.

1- Champagne Blanc de Blancs from a small grower such as Remy Leroy.
2 - Sauvignon Blanc from the Eastern Loire Valley with a minerally example from Domaine Bailly in Pouilly Fume.
3- Chenin Blanc from the Central Loire Valley with a rare and surprising Savennieres from Patrick Baudoin.
4- White Burgundy could be next: St-Aubin from Hubert Lamy or a Grand Cru Corton-Charlemagne from David Moret...
5- Red Burgundy to start our flight of Reds. What would be your preference? A light and young Beaune from De Montille or a spicier and more mature Gevrey-Chambertin from Dugat?
6- Bordeaux: Do you want to try a specific vintage like 1990, 2000, 2010? What about a nice Margaux from Chateau Durfort-Vivens or a more sought-after Saint-Julien from Chateau Leoville-Poyferre?
7- Sweet wine: Your wine tasting experience could finish with a luscious Sauternes or a delicious Jurancon.
